Suggested Use 

Lecithin granules can be enjoyed pure, sprinkled directly over salads and raw vegetables or mixed into your favourite shakes, smoothies, juices and nut milks. Lecithin makes drinks slightly thicker (lecithin reaches its maximum thickness after 10 minutes) and more creamy. Lecithin also has an emulsifying effect, which means that it can be used to mix oil based food products with water. Not suitable for use in hot food or drinks as this will result in the essential fatty acids contained in lecithin being lost. 

Origins 

Lecithin is a wax-like substance that is usually extracted from eggs or soya. This is achieved with the aid of hexane, an oil derivative that is highly flammable. As most soya is genetically modified, new sources (such as sunflower and pumpkin seeds) have been increasingly used for the isolation and extraction of lecithin in recent years. 

Quantity and Dosage 

Stir 1 to 2 tablespoons (8 to 16 grams) of lecithin granules daily, into your favourite cold drink or meal. One jar of lecithin granules contains 400 grams, so can last up to 50 days, depending on how much you use. As lecithin granules attract moisture, store in an airtight container and in a dry place after opening.

  • In the food industry, lecithin is commonly used as an emulsifier. However, industrial lecithin products are often extremely cheap and usually come from genetically modified soya
  • Lecithin was first discovered by French scientist Theodore Gobley in 1946. He isolated lecithin from egg yolk and managed to prove that lecithin is present in many food products as well as the human body.
