Suggested Use

Irish moss is an ideal binder in smoothies, lassis, shakes and soups. It can also be used as a gelling agent in raw pies and cakes, or as a raw ingredient in salads. Rinse the Irish moss thoroughly with water and leave to soak for between 4-24 hours in lukewarm water. Afterwards, you can eat the Irish moss directly or prepare a gel / gelling agent from it. To do this, place in a blender with a little water and finely blend until it forms a smooth gel, before leaving to rest for a further hour. Soaked Irish moss can be refrigerated for up to 3 weeks. Irish moss gel can also be refrigerated for 3 weeks, providing the water is refreshed daily. Unopened Irish moss has a shelf life of 1 year. 


Irish moss, also known as carrageen moss, is derived from the Irish word "carraigin" which means "little rock”. Irish moss is in fact not actually a moss, but rather a seaweed which grows predominantly along the European and American shores of the Atlantic. In Europe, Irish moss is mainly obtained from the coasts of Ireland and France, whilst in the United States, it comes solely from the shores of Massachusetts. Fresh Irish moss is greenish yellow to red in colour, with dark purple or purple-brown hues and it feels soft and cartilaginous to the touch. 

Quantity and Dosage 

Use 1 tablespoon of Irish moss gel as a binder for 4 smoothies. 1 to 2 tablespoons (4 to 8 grams) of dried Irish moss is sufficient for adding to salads (always soak in water first).
