Origins

The primary ingredient in kelp noodles is kelp. Kelp is a variety of seaweed that belongs to the brown algae family (Laminariales) and thrives best in shallow waters, where temperatures average between 6 and 15 degrees Celsius. Some types of kelp grow extremely quickly and can increase by 30 cm in size in just one day, whilst others grow very big and can reach a remarkable 75 metres in length. The fast-growing kelp is the most frequently cultivated variety as it also grows just below the surface, making it particularly easy to harvest. In the nineteenth century kelp was widely used as raw material in the manufacture of washing soda (sodium carbonate) and in recent years kelp has become a highly popular nutrient that’s increasingly sold in organic food shops.
