Suggested Use 

Kelp noodles can be eaten cooked or raw, you simply need to rinse them first with water. The neutral flavour of kelp noodles allows you to prepare an infinite selection of delicious meals including tasty Italian dishes (by replacing regular pasta), stir fry dishes (by switching from ordinary noodles), stews, soups, salads and snacks and they can even be added to smoothies. 

Origins 

The primary ingredient in kelp noodles is kelp. Kelp is a variety of seaweed that belongs to the brown algae family (Laminariales) and thrives best in shallow waters, where temperatures average between 6 and 15 degrees Celsius. Some kelps grow extremely quickly and can increase by 30 cm in just one day, whilst others grow very big and can reach a remarkable 75 metres in length. The fast-growing kelp is the most frequently cultivated variety, as it also grows just below the surface, making it particularly easy to harvest. In the nineteenth century kelp was widely used as raw material in the manufacture of washing soda (sodium carbonate), but in recent years kelp has become a highly popular nutrient and is increasingly sold in organic food shops. 

Quantity and Dosage 

Use 110 grams of kelp noodles for a single serving. One pack of kelp noodles contains 340 grams, so you can prepare up to 3 meals, depending on how much you use.

  • One portion of kelp noodles contains just six calories and one gram of carbohydrates
  • Kelp noodles taste different to regular pasta. They are less floury than standard pasta and boast a neutral flavour which tends to adopt the taste of the dish that you’re preparing. This means that you can make them as spicy, sweet or salty as you like!
  • Kelp noodles are much less sticky than wheat noodles and, although they contain plenty of water, are even a little crunchy
  • The structure of kelp noodles is much stronger than that of wheat pasta or ordinary noodles, which means that you can cook them for a long time, in soups for example, without them forming a sticky goo
  • The Japanese call kelp from the Pacific Ocean, ‘Kombu’. Kombu are rich in natural glutamic acid and are used as an ingredient in traditional dishes such as soups, stews and sushi. In addition, it is often used in Japan to soften beans while cooking.
